Deserts are brutal in a different way to forests — it's not always what's hunting you, sometimes it's just the heat, the sand, and how far you are from water. Whether your party's crossing dunes between oases or digging through buried ruins, these encounter ideas can help bring the desert to life, or bring it to an end for a PC.

Scorpions — giant scorpions are a great classic desert threat, and they scale really well. Run a swarm of smaller ones for a lower-level party, or drop in a single giant scorpion with a nasty paralysing sting for a proper set-piece fight. Burying one under the sand for a surprise attack is always a fun DM moment.

Sand Snakes — good one for tension rather than a straight fight. Sand snakes work brilliantly as an ambush predator, striking from beneath the dunes when the party's already exhausted from the heat. Stack a poison or exhaustion effect on the bite and you've got a genuinely dangerous encounter even at low CR.

Lamia — brilliant for a social-then-combat twist. A lamia can lure the party in with illusion or charm before the fight even starts, which makes for a much more memorable encounter than a straight ambush. Great option if you want your desert arc to have a proper mid-point boss rather than just another monster fight.
